Turkey Harvest Salad

 

Turkey Harvest Salad is a great way to use up leftover turkey breast from Thanksgiving. Let’s be clear though, it’s totally worth going to the store to buy turkey just to make this salad. Turkey Harvest Salad definitely has all of the fall feels with ingredients like dried cranberries, walnuts, blue cheese, and a maple balsamic dressing. I am pretty sure that you need to put on your sweatpants, turn on a football game, and enjoy this salad with the company of your loved ones. A dry chardonnay wouldn’t hurt either! 🙂

INGREDIENTS

  • 8 cups or more Romaine lettuce, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts, chopped
  • 1/2 cup blue cheese, crumbled
  • 1-2 cups turkey, diced or sliced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons pure maple syrup
  • 2 teaspoons whole grain or Dijon mustard
  • salt and pepper, to taste

INSTRUCTIONS

  1. Whisk olive oil, balsamic vinegar, maple syrup, mustard, salt, and pepper together.
  2. Combine lettuce, dried cranberries, walnuts, and blue cheese together in a bowl. Pour dressing over salad mixture and toss until salad is well-coated.

NOTES

Dairy-free: Remove blue cheese.
