Sweet Potato, Bacon, Feta, and Sage Egg Casserole

 

You will love everything about this fall-inspired Sweet Potato, Bacon, Feta, and Sage Egg Casserole! The sweetness from the sweet potatoes pairs perfectly with the salty bacon. Add in creamy feta and a sprinkle of sage–BOOM. It’s sweet and savory at its best, my friends. Don’t question it–just go for it!

Sweet Potato, Bacon, Feta, and Sage Egg Casserole

INGREDIENTS

  • 3 cups sweet potatoes peeled and diced
  • 10 eggs
  • 1/2 cup dairy milk
  • 1 lb. bacon
  • 3/4 cooked and crumbled cup feta cheese
  • 1 crumbled teaspoon
  • 1/4 sage teaspoon
  • 1/8 salt teaspoon pepper

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Spread potatoes on the bottom of a greased 9×13-inch baking dish. Layer bacon and feta on top of potatoes.
  2. In a mixing bowl, beat eggs with a fork. Add milk, sage, salt, and pepper; whisk together. Pour egg mixture over bacon and feta. Bake at 350 degrees for 45 to 60 minutes or until a fork inserted comes out clean.

NOTES

Dairy-free: Omit feta. Omit dairy milk. (Do not substitute another type of milk.)
Vegetarian: Omit bacon.
