Sweet and Savory Brussels Sprouts

INGREDIENTS

  • 2 pounds Brussels sprouts
  • 5 pieces bacon
  • 1/4 cup chopped walnuts, toasted*
  • 3 Medjool dates, pit removed, diced
  • olive oil, optional
  • salt and pepper, to taste

INSTRUCTIONS

  1. Cut stalks off of brussels sprouts. Slice sprouts into thirds. Brussels sprouts will resembled shredded lettuce.
  2. Cook bacon in a skillet. When cooked, remove bacon from skillet; chop into small pieces. Do not drain grease.
  3. Heat bacon grease over medium heat and add Brussels sprouts, salt, and pepper. (If you need additional cooking fat, add olive oil.) Cook for 10-15 minutes or until Brussels sprouts are tender. Add dates, bacon, and toasted walnuts; cook for 4-5 minutes or until all ingredients are warmed.

NOTES

To toast walnuts, place on a baking sheet and cook for 4-5 minutes at 400 degrees or until nuts become fragrant.
