Super Simple Beef Enchiladas

 

Super Simple Beef Enchiladas is an easy to cook meal the whole family will love! You can make them up to 24 hours in advance and bake them right before serving–this is a great option for busy weeknights! This is one of my family’s favorite meals–I hope yours enjoy them just the same!

 

 

Super Simple Beef Enchiladas

INGREDIENTS

  • 1 lb. ground beef
  • 1 small green pepper, diced
  • 1 small onion, diced
  • 2 cups or more sharp cheddar cheese, shredded, divided
  • 1 cup refried beans
  • 8 flour or whole wheat tortillas (I use Whole Foods 365 brand.)
  • 1 packet taco seasoning (I use Simply Organic Mild Taco Seasoning.)
  • 8 oz. package red enchilada sauce (I use Simply Organic Red Enchilada Simmer Sauce.) cilantro, for garnish
  • diced avocado and sour cream, for serving

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Add beef, green pepper, and onion to a pan. Cook for 12-15 minutes or until beef is cooked throughout and vegetables are tender.
  3. Whisk taco seasoning packet with 1/2 cup warm water. Add to beef; cook for 2-3 minutes, thoroughly coating beef with seasoning mix. Remove from heat; set aside.
  4. Lay tortillas on counter or work surface. Spread 1/8 cup refried beans onto each tortilla. Top beans with 1/8 cup cheddar cheese and an equal portion of the ground beef mixture.
  5. Roll tortillas to form enchiladas; place them side by side in a sprayed baking dish.
  6. Pour enchilada sauce over enchiladas; use a spoon to completely cover enchiladas with sauce. (This will ensure enchiladas stay soft while they are baking.) Top enchiladas with remaining 1 cup of cheese.
  7. Bake for 25-30 minutes or until enchiladas are warmed and cheese has melted. Garnish with cilantro.
  8. Serve with avocado and sour cream.

NOTES

You can find Simply Organic products at Whole Foods or select natural food stores. You can prep enchiladas up to 24 hours ahead of time and store them in the refrigerator. Before cooking, bring them to room temperature.
