Slow Cooker Creamy Chicken Fajita Soup

INGREDIENTS

  • 2 12 oz. packages Pacifica Organic Cream of Chicken Condensed Soup*
  • 1 lb. chicken breast
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 1 cup frozen or canned corn
  • 15 oz. can black beans, rinsed and drained
  • 1 cup salsa
  • 1 1/2 cups water
  • 1.5 tablespoons Mexican, Chipotle, or Fajita seasoning
  • pepper jack cheese, for serving
  • avocado, for serving
  • cilantro, for serving

INSTRUCTIONS

  1. Place chicken breast in a sprayed slow cooker. Sprinkle seasoning over chicken breast. Add green bell pepper, red bell pepper, onion, corn, black beans, soup, salsa, and water. Stir as best you can to combine. Cook on low for 6-8 hours. Remove chicken from slow cooker; shred and place back into slow cooker. Stir to combine. Keep on warm until ready to serve.
  2. Top with cheese, avocado, and cilantro.

*Pacifica Cream of Chicken Condensed soup can be found at Whole Foods.
