Raw Zucchini Noodle Salad

 

Raw Zucchini Noodle Salad is a great, healthy stand-in for traditional pasta salad! It has been my go-to summer side dish. It’s a super flexible dish too–you can add any vegetable or protein that you would generally enjoy in pasta salad. The Primal Kitchen Greek Dressing is delicious, but any sort of Italian or Greek dressing will work! I hope you and your family enjoy this as much as we have!

Raw Zucchini Noodle Salad

INGREDIENTS

  • 8 cups zucchini noodles
  • 1 cucumber, seeded and diced
  • 1 red bell pepper, diced
  • 1/3 cup or more, Kalamata olives, pitted and sliced in half
  • 1/2 cup Primal Kitchen Greek Dressing
  • goat cheese crumbles, for serving

INSTRUCTIONS

  1. Toss zucchini, cucumber, bell pepper, olives, and dressing together. Allow to sit in refrigerator overnight.
  2. Sprinkle with goat cheese before serving.

NOTES

Add protein to salad to take it from side dish to meal! Dairy-free: Omit goat cheese crumbles. Paleo: Omit goat cheese crumbles. Vegan: Omit goat cheese crumbles.
