Raw Shredded Brussels Sprouts Salad

 

Raw Shredded Brussels Sprouts Salad will knock your flip-flops off! It is everything you could ask for in a dish–nutty, sweet, and savory. Even non-Brussels sprouts eaters will become believers!

The recipe originates from one of my favorite food blogs, Pinch of Yum. Lindsay and her husband Bjork are so fun to follow and they constantly post new recipes that are inspiring, yet realistic for real life cooking! Be sure to check them out!

This is a great dish to serve at a cookout or get-together. It’s adventurous but not too scary that people won’t try it! Enjoy!

 

Raw Shredded Brussels Sprouts Salad

Cook Time: 10 minutes
Total Time: 25 minutes

INGREDIENTS

  • 4 dozen brussels sprouts
  • 1 cup walnuts, chopped
  • 6 slices cooked nitrate-free bacon, crumbled or chopped
  • 1 cup fresh grated Parmesan cheese
  • juice of one lemon
  • juice of one orange
  • 2-3 tablespoons raw honey
  • 1 shallot, minced
  • ½ cup extra virgin olive oil
  • ½ teaspoon salt and pepper, to taste

INSTRUCTIONS

  1. Slice brussels sprouts into thin sections, discarding the thick stem. Brussels sprouts should resemble shredded lettuce. You may have to break some of the pieces apart with your hands.
  2. Combine the lemon juice, orange juice, honey, and shallots in a small bowl. Add the olive oil in a steady stream and whisk for a minute or two, thoroughly combining all ingredients.
  3. Top the brussels sprouts with walnuts, bacon, cheese, salt, and pepper. Pour dressing over salad ingredients and toss until evenly coated.

NOTES

Make the salad 1-2 hours before serving and keep in refrigerator. This will allow the brussels sprouts to marinate in the dressing and soften just a bit! Enjoy!
