Pumpkin and White Chocolate Chip Baked Oatmeal

INGREDIENTS
- 2 eggs, whisked
- 1 cup unsweetened vanilla nut milk (may use dairy milk)
- 1/4 cup applesauce
- 1/3 cup pure honey
- 3/4 cup 100% pure pumpkin (not pumpkin pie filling)
- 1 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- 3 cups oatmeal
- 1/3 cup white chocolate chip
INSTRUCTIONS
Preheat oven to 350 degrees. Thoroughly mix eggs, milk, applesauce, honey, pumpkin, salt, pumpkin pie spice, and cinnamon. Stir in oats and chocolate chips. Pour into a greased 9-inch pie plate or baking dish.
Bake for 25 minutes or until a fork inserted comes out clean.
