Pesto, Marinara, and Mozzarella Baked Chicken

 

Dinner does not get any easier than Pesto, Marinara, and Mozzarella Baked Chicken! This recipe is a cinch to make and is full of flavor. It’s a crowd pleaser as it can be served over spaghetti squash, zoodles, noodles, mashed cauliflower, or toast points. Plus, the recipe is easy to double or triple for large families!

I like to keep extra jars of marinara and pesto in my pantry so I always have the option to whip up this quick and flavorful recipe when time is short. We recently served Pesto, Marinara, and Mozzarella Baked Chicken over Green Giant Garlic and Herb Mashed Cauliflower. I have a feeling this will be a standby meal after Baby Boy #2 is born! Enjoy!

 

Pesto, Marinara, and Mozzarella Baked Chicken

Prep Time: 5 minutes
Cook Time: 45 minutes
Total Time: 50 minutes

INGREDIENTS

  • 1 lb. chicken breast, divided into four equal portions
  • 2 cups marinara sauce
  • 4 tablespoons pesto
  • 1 cup mozzarella cheese
  • salt and pepper, to taste

INSTRUCTIONS

  1. Preheat oven to 375 degrees. Place chicken breast in a greased baking dish. Season with salt and pepper.
  2. Pour marinara sauce around the chicken breast. Evenly spread pesto over chicken breast; cover and bake for 45-60 minutes or until chicken reaches an internal temperature of 165 degrees.
  3. Turn oven to broil. Top with cheese. Broil for 2-4 minutes or until cheese is browned and bubbly.

NOTES

Serve over spaghetti squash, zoodles, noodles, mashed cauliflower, or toast points.

Dairy-free: Omit mozzarella. Omit step 3.
