Pesto Chicken Zoodles

 

Pesto Chicken Zoodles is a delicious grain-free, low-carb “pasta” dish! It is filling, yet light! If you haven’t tried zoodles, this dish will turn you into a believer. Enjoy!

Cook Time: 30 minutes
Total Time: 40 minutes

INGREDIENTS

  • 1 pound organic chicken breast
  • 8 cups zucchini noodles
  • 1 cup grape tomatoes, sliced in half
  • 4 cups fresh spinach leaves
  • 2 tablespoons olive oil
  • 1/2 cup prepared pesto, divided
  • shaved parmesan, for serving

INSTRUCTIONS

 

  1. Preheat oven to 400 degrees. Spread chicken breast evenly with 1/4 cup pesto. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165 degrees. Dice chicken into small pieces; set aside.
  2. Heat olive oil over medium heat. Add tomatoes to pan; cook for 3 minutes or until slightly tender.
  3. Add zucchini noodles, 1/4 cup pesto, and diced chicken to the pan; continue to cook for 3-4 minutes or until zucchini noodles become slightly tender.
  4. Add spinach to pan and cook for another 2-3 minutes or until spinach wilts.
  5. Top with shaved parmesan cheese.
