Maple Glazed Sweet Potatoes

 

Maple Glazed Sweet Potatoes are a healthy stand-in for a typical sweet potato casserole. There are no marshmallows, brown sugar, or candied nuts; instead, the sweet potatoes are enhanced with a touch of pure maple syrup and toasted walnuts. It is simply delicious!

INGREDIENTS

  • 2 large sweet potatoes, peeled and diced
  • 2 tablespoons coconut oil
  • 1 tablespoon pure maple syrup
  • 1/4 cup chopped walnuts, toasted (optional)

INSTRUCTIONS

1. Preheat oven to 400 degrees. Melt coconut oil. Toss potatoes in coconut oil and place on a baking sheet.

2. Bake potatoes for 30-45 minutes; stirring every 15 minutes, or until potatoes are tender and cooked throughout.

3. Top with toasted walnuts.

 

NOTES

To toast walnuts, cook at 400 degrees for 3-5 minutes, or until fragrant.
