INGREDIENTS
- 1.5 pounds ground turkey
- 2 tablespoons olive oil
- 8 bell peppers (I like a mix of green and red.)
- 1 cup of brown rice, uncooked
- 4 fresh garlic cloves, minced
- 1/2 sweet onion, finely diced
- salt and pepper, to taste
- 4 cups pasta sauce
- 2 cups of mozzarella cheese
INSTRUCTIONS
- Heat oven to 350 degrees.
- Cook rice according to package directions.
- Clean peppers, cut tops off, discard seeds and ribs. Boil peppers for 5 minutes, remove from water, let cool. Place peppers upright in a baking dish.
- Sauté fresh garlic, onion, salt, and pepper in olive oil for 5-10 minutes or until soft.
- Add turkey to pan; cook. Remove from heat; drain grease if necessary.
- Mix cooked rice, turkey, and 2 cups of sauce together.
- Evenly stuff peppers with turkey mixture. Top peppers with remaining 2 cups of sauce.
- Cover baking dish with foil and cook for 45 minutes.
- Remove peppers from oven, top with mozzarella cheese, and cook, uncovered, for an additional 15 minutes or until cheese is melted and slightly browned.
NOTES
Dairy-free: Omit cheese.
