Italian Stuffed Peppers

INGREDIENTS

  • 1.5 pounds ground turkey
  • 2 tablespoons olive oil
  • 8 bell peppers (I like a mix of green and red.)
  • 1 cup of brown rice, uncooked
  • 4 fresh garlic cloves, minced
  • 1/2 sweet onion, finely diced
  • salt and pepper, to taste
  • 4 cups pasta sauce
  • 2 cups of mozzarella cheese

INSTRUCTIONS

  1. Heat oven to 350 degrees.
  2. Cook rice according to package directions.
  3. Clean peppers, cut tops off, discard seeds and ribs. Boil peppers for 5 minutes, remove from water, let cool. Place peppers upright in a baking dish.
  4. Sauté fresh garlic, onion, salt, and pepper in olive oil for 5-10 minutes or until soft.
  5. Add turkey to pan; cook. Remove from heat; drain grease if necessary.
  6. Mix cooked rice, turkey, and 2 cups of sauce together.
  7. Evenly stuff peppers with turkey mixture. Top peppers with remaining 2 cups of sauce.
  8. Cover baking dish with foil and cook for 45 minutes.
  9. Remove peppers from oven, top with mozzarella cheese, and cook, uncovered, for an additional 15 minutes or until cheese is melted and slightly browned.

NOTES

Dairy-free: Omit cheese.
