Skinnytaste’s Flourless Chocolate Brownies

 

This PB2 Flourless Chocolate Brownie from www.skinnytaste.com caught my eye a few weeks ago. I love following the Skinnytaste blog–Gina does a great job creating delicious recipes that are healthy and that keep calories in check. Plus, she has a great name (wink, wink).

This brownie recipe is flourless, gluten-free, and contains no oil or butter–that is something to smile about! I have a lot of friends at work that follow a gluten-free diet and I can’t wait to bring these to our next potluck lunch.

These brownies are good on their own but a scoop of vanilla ice cream takes them to the next level. You know how peanut butter goes with jelly? Well, that is how I feel about brownies and ice cream. I have even converted my husband into a lover. Enjoy!

Skinnytaste's Flourless Chocolate Brownies

Cook Time: 30 minutes
Total Time: 40 minutes

INGREDIENTS

  • 1 large egg
  • 1 large egg white
  • 1 cup powdered peanut butter
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup plus 1 tbsp water
  • 1/2 cup raw honey
  • 1 tsp vanilla
  • 3/4 cup chocolate chips

INSTRUCTIONS

  1. Preheat oven to 325. Spray a nonstick 9×9 inch baking pan with cooking spray.
  2. Beat the egg and egg white together in a small bowl.
  3. In a large bowl, combine the powdered peanut butter, cocoa powder, salt, and baking soda; mix well.
  4. Add the egg and egg white; stir.
  5. Add water, honey, and vanilla; stir with spatula until well-combined. Fold in the chocolate chips.
  6. Pour mixture into the prepared baking pan and bake about 30 minutes. Allow to cool.
