Ham, Feta, and Kale Crustless Quiche

 

Ham, Feta, and Kale Crustless Quiche is fancy enough for brunch guests, but easy enough for weekdays! I like to make this on Sunday and enjoy it throughout the week for breakfast. My son also really likes this crustless quiche–he doesn’t love vegetables, but he gobbles this right up without even realizing there is kale in it! <– And all the moms said, amen.

Ham, Feta, and Kale Crustless Quiche

Cook Time: 45 minutes
Total Time: 60 minutes

INGREDIENTS

  • 12 eggs, whisked
  • 1/2 cup dairy milk
  • 1 cup ham, diced
  • 1/2 cup feta cheese, crumbled
  • 4 cups kale, de-stemmed and finely shredded
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Heat oil over medium heat; sauté kale for 6-8 minutes or until slightly tender.
  3. Combine eggs, milk, ham, feta cheese, kale, salt, and pepper together. Pour into a greased baking dish.
  4. Bake for 45 minutes or until a fork inserted in the center comes out clean.

NOTES

Dairy-free: Omit milk. Omit feta.
Vegetarian: Omit ham.
