Garlic Mashed Cauliflower

 

Garlic Mashed Cauliflower is a great low-carb stand-in for mashed potatoes! Cauliflower cleanses the liver, is an anti-inflammatory, boosts your immune system, and helps flush fat from your system. White vegetables don’t always get the play time they deserve! Another great way to enjoy cauliflower is to roast them with olive oil, salt, and pepper. Both versions are SO good–it just depends on what texture you are in the mood for. My favorite way to eat Garlic Mashed Cauliflower is underneath meatloaf, grilled salmon, or baked chicken. I hope you enjoy them!

Garlic Mashed Cauliflower

Cook Time: 20 minutes
Total Time: 25 minutes

INGREDIENTS

  • head of cauliflower, chopped into florets
  • 1.5 teaspoons minced garlic
  • 1/4 cup sour cream or plain Greek yogurt
  • 1/4 cup whole milk (you may need a touch more to thin cauliflower)
  • 1/3 cup Parmesan cheese
  • 1.5 tablespoon fresh parsley or 1/2 tablespoon dried parsley
  • garlic salt, to taste
  • pepper, to taste

INSTRUCTIONS

  1. Boil cauliflower and minced garlic for 15-20 minutes or until cauliflower is tender; drain.
  2. Put cooked cauliflower and the rest of the ingredients in a blender; blend until smooth.
