Flourless Peanut Butter Chocolate Chip Chickpea Blondes are SO good! This was the first time I have used chickpeas in a dessert recipes, so I was a little hesitant about how they would taste. There wasn’t a hint of chickpea flavor–I think the peanut butter, honey, and vanilla covered up the taste. Your loved ones will have no idea they are in there. Only you will have the satisfaction of knowing they are gobbling up a fiber-rich treat. Plus, these are made with all real food ingredients so you don’t have to worry about any added gunk or artificial ingredients like the ones you find in pre-packaged treats from the store. Enjoy!

Flourless Peanut Butter Chocolate Chip Chickpea Blondies

Total Time: 35 minutes

INGREDIENTS

  • 15 oz. can chickpeas, rinsed and drained
  • 1/2 cup organic natural peanut butter
  • 1/3 cup 100% pure honey
  • 2 teaspoons vanilla
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 14 teaspoon baking soda
  • 1/3 cup Enjoy Life chocolate chips

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Grease an 8×8 baking dish.
  2. Add all ingredients, except for chocolate chips, to a food processor; process until smooth. Fold in chocolate chips.
  3. Spread batter evenly in prepared baking dish. Bake for 20-25 minutes or until toothpick comes out clean and edges are slightly brown.
  4. Cool for 20 minutes before cutting.

NOTES

The batter may appear underdone but you don’t want to dry them out. There are no raw ingredients, so there is no need to be concerned that they aren’t fully cooked.
