Five-Ingredient Creamy Crockpot Chicken

 

Five-Ingredient Creamy Crockpot Chicken–need I say more? This is an easy dish your whole family will love. Serve it over cauliflower rice, quinoa, or a whole grain of your choice. Pairs nicely with roasted green beans, broccoli, or asparagus. Enjoy!

Five-Ingredient Creamy Crockpot Chicken

Total Time: 6 hours 5 minutes

INGREDIENTS

  • 1.5 lbs. chicken breast
  • 16 oz. sour cream
  • 12 oz. cream of chicken soup (I use Pacifica.)
  • 1.5 cups “Ritz” crackers, crushed (I use Late July Classic Rich or Whole Foods 365 Golden Round.)
  • 1/4 cup butter, melted
  • salt and pepper, to taste

INSTRUCTIONS

  1. Place chicken in a sprayed or greased crockpot. Sprinkle with salt and pepper.
  2. Mix sour cream and cream of chicken soup until well combined; pour over chicken.
  3. Cook on low for 5-6 hour or until chicken is cooked throughout.
  4. Heat oven to 375 degrees. Remove chicken from crockpot and shred. Place shredded chicken back into crockpot and mix with sauce.
  5. Pour chicken mixture into a baking dish.
  6. Combine butter and crushed crackers together; evenly layer them on top of chicken mixture.
  7. Bake for 10-15 minute or until cracker crumbs are golden brown.
