Fish Tacos with Chipotle Lime Slaw

 

The only thing missing with Fish Tacos with Chipotle Lime Slaw is a beach and a Corona! If you are a fellow fish taco fan (and like a fast, easy, and flavorful dinner) you have to make these. This recipe can be broken down into three easy steps: 1. Make the slaw 2. Bake the fish 3. Assemble. Pretty easy, right?

I used lettuce wraps but you could easily use a corn or flour taco shell for a more traditional fish taco. My recommended taco shells are Ezekiel sprouted corn shells or Whole Foods 365 sprouted corn shells. For non-grainers, I like Siete almond flour wraps. Whichever way you build it, you will enjoy the lightness of the dish and the fresh flavors!

Fish Tacos with Chipotle Lime Slaw

INGREDIENTS

  • 1.5 pounds cod or other whitefish
  • 1 avocado, diced
  • 1 head Iceberg lettuce, cut and separated into cups
  • 2 cups broccoli cole slaw
  • 2 limes, divided
  • 2 tablespoons chipotle lime mayonnaise (I like Primal Kitchen brand.)
  • 1 tablespoon avocado or olive oil
  • 1.5 teaspoons chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • hot sauce, to taste

INSTRUCTIONS

  1. Whisk oil, chipotle mayonnaise, and juice from one lime together. Thoroughly toss with broccoli slaw. Refrigerate.
  2. Preheat oven to 400 degrees. Mix all spices, salt, and pepper together. Place fish on greased baking sheet. Squeeze juice from one lime over fish and evenly sprinkle with seasoning mixture. Bake for 20 minutes or until fish is cooked throughout. Fish should easily flake when cooked. Gently break fish into smaller pieces with a fork.
  3. Place fish in lettuce cups. Top fish with chipotle lime broccoli slaw, and diced avocado. Drizzle with hot sauce if desired. Optional to serve with salsa and/or sour cream.

 

NOTES

You can also serve the fish in a more traditional taco shell.
