Fiesta Bowls

 

The Fiesta Bowls recipe was featured in my March newsletter and was a huge hit! I have received a lot of great feedback on it and couldn’t wait to share the recipe with you. To make it fun, set up all of the ingredients out (buffet-style) and let everyone in your family build their own bowls! It’s so fun for each person to be creative and craft their “perfect” bowl. Enjoy!

Cook Time: 30 minutes
Total Time: 40 minutes
A customizable meal the whole family will love!

INGREDIENTS

  • 1 cup quinoa, uncooked
  • 2 cups chicken broth
  • 1 pound chicken breast
  • 1 large sweet onion, diced
  • 1 large green pepper, diced
  • 1/2 cup grape tomatoes, diced
  • 1 cup black beans, rinsed
  • 1 cup corn
  • 2 tablespoons olive oil
  • Mexican, fajita, or chipotle seasoning, to taste
  • salt and pepper, to taste
  • Sour cream, guacamole, salsa, cheese and chips for serving!

INSTRUCTIONS

  1. Preheat oven to 350 degrees. Place chicken on a greased baking sheet. Generously season both sides of chicken breast with seasoning. Bake for 30 minutes or until chicken reaches internal temperature of 165 degrees. Dice chicken into small pieces; set aside.
  2. Cook quinoa according to package directions substituting chicken broth for water; set aside.
  3. Sauté onion and pepper in olive oil for 15 minutes or until tender. Sprinkle seasoning, salt, and pepper over vegetables as you cook them.
  4. Add beans, corn, and tomatoes and continue to cook for 5-10 minutes.
  5. Add chicken to the mixture and continue to cook for another five minutes, allowing chicken to heat throughout.
  6. Build your own fiesta bowl by layering quinoa, fiesta chicken mixture, sour cream, guacamole, cheese, and salsa. Serve with chips!

    For Vegetarians, you can use tofu in place of the chicken and use vegetable stock in place of the chicken broth. Yummy!

      Thank you Vickie Hall! That is a wonderful idea for vegetarians! Now that I think about it, Tempeh could work too in place on the chicken!
