INGREDIENTS
- 1 lb. ground pork
- 10-12 oz. coleslaw or broccoli slaw mix
- 1/4 cup green onion, sliced
- 1 small sweet onion, diced
- 4 cloves garlic, minced
- 1/2 cup coconut aminos (I like Coconut Secret brand.)
- 2 tablespoons rice vinegar
- 1 1/2 tablespoons coconut oil
- 1 1/2 tablespoons sesame oil
- 1 tablespoon ground ginger
- sesame seeds, for garnish
- salt and pepper, to taste
INSTRUCTIONS
- Thoroughly cook ground pork in a large skillet; season with ground ginger, salt, and pepper. Remove pork from skillet; set aside.
- In the same skillet, heat coconut oil and sesame oil over medium heat. Add green onion, sweet onion, garlic, and slaw mix; saute for 10-15 minutes or until vegetable are tender.
- Add pork back to skillet.
- Whisk coconut aminos and rice vinegar together. Pour over pork and vegetable mixture; stir until well combined. Continue to cook on low for 10-15 minutes to allow flavors to meld.
- Sprinkle with sesame seeds prior to serving.
