A healthy, low-carb, and delicious side dish. Pairs well with a variety of proteins!
INGREDIENTS
- 4 cups riced cauliflower
- 1-2 tablespoon garlic, minced
- 1/3 cup red onion, diced
- 1/4 cup Parmesan cheese, shredded
- 1 tablespoon olive oil
- salt, to taste
- pepper, to taste
INSTRUCTIONS
- Heat olive oil over medium-low heat. Sauté garlic and red onion for 5-8 minutes or until fragrant and slightly tender.
- Add riced cauliflower, salt, and pepper to pan. Cook for 8-10 minutes, stirring occasionally, or until riced cauliflower is tender.
- Stir in Parmesan cheese.
NOTES
Dairy-free: Omit Parmesan cheese.
Paleo: Omit Parmesan cheese.
Vegan: Omit Parmesan cheese.
