Easy Italian Riced Cauliflower

A healthy, low-carb, and delicious side dish. Pairs well with a variety of proteins!

INGREDIENTS

  • 4 cups riced cauliflower
  • 1-2 tablespoon garlic, minced
  • 1/3 cup red onion, diced
  • 1/4 cup Parmesan cheese, shredded
  • 1 tablespoon olive oil
  • salt, to taste
  • pepper, to taste

INSTRUCTIONS

  1. Heat olive oil over medium-low heat. Sauté garlic and red onion for 5-8 minutes or until fragrant and slightly tender.
  2. Add riced cauliflower, salt, and pepper to pan. Cook for 8-10 minutes, stirring occasionally, or until riced cauliflower is tender.
  3. Stir in Parmesan cheese.

NOTES

Dairy-free: Omit Parmesan cheese.
Paleo: Omit Parmesan cheese.
Vegan: Omit Parmesan cheese.
