Easiest Buffalo Chicken

Easiest Buffalo Chicken is one of our go-to recipes. I consider this a “base recipe” as it can be used multiple ways: a filling for lettuce cups, in a quesadilla, on a bun, as a nacho topping, on a salad, or just straight-up on its own! You could even put it in a baking dish, top with cheese, and bake at 350 degrees for 20-25 minutes and serve it with celery sticks or tortilla chips for an appetizer. Yep, it’s pretty much universal. The whole family will give two thumbs up!

INGREDIENTS

  • 1 lb. chicken breast
  • 1 cup low-sodium chicken stock
  • 1 cup or more buffalo sauce (I like Cindy’s Kitchen Buffalo Wing Sauce, Frank’s Original, Tessemae’s Mild or Hot Buffalo Sauce, or The New Primal’s Noble Made Mild, Medium, or Hot.)
  • salt and pepper, to taste
  • 1/4 cup or more green onions, sliced
  • 1/4 cup or more feta, blue cheese, or goat cheese crumbles

INSTRUCTIONS

  • Place chicken in a greased slow cooker; sprinkle with salt and pepper. Add chicken stock to slow cooker. Cook on low for 8 hours. Remove chicken from crockpot; shred and place in a bowl.
  • Add buffalo sauce to shredded chicken; stir until well combined. Top with green onion and cheese.

NOTES

  • Gluten-free: Use a certified gluten-free sauce.
  • Dairy-free: Omit cheese.
