Cucumber Dill Salmon

 

Cucumber Dill Salmon is one of my favorite meals! This recipe was given to me by a co-worker. It was one of the first recipes I cooked for Cody and after one try he was hooked. It is part of our regular recipe rotation. It is fancy enough for company, but truly is a cinch to cook.

Not only is this recipe delicious, salmon is a great source of omega-3 fatty acids. The forms of omega-3’s in salmon are EPA and DHA, which your body can readily use. Some sources of omega-3’s come in the form of ALA, which your body has to convert to EPA and DHA. This conversion rate is very low, so when you have the option to consume an EPA and DHA-rich food, it’s so good for you! I recommend my clients to eat salmon two times a week if possible.

If you have leftover cucumber dill sauce, save it to use as a dip for vegetables! I hope you enjoy this recipe!

A fresh, light, and tasty salmon dish!

INGREDIENTS

  • 4 pieces salmon
  • 1/2 lemon, for squeezing
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cucumber, peeled, seeded, and diced
  • 2 tablespoons dill, divided
  • 2 tablespoons Dijon mustard
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

INSTRUCTIONS

  1. Preheat oven to 400 degrees. Mix mayonnaise, sour cream, Dijon mustard, 1 tablespoon dill, and cucumber together. Refrigerate for at least 30 minutes. The sauce will be used for serving.
  2. Place salmon in a greased baking dish. Season salmon with 1 tablespoon of dill, salt, and pepper. Squeeze lemon over salmon. Bake for 20-25 minutes or until salmon is cooked throughout.
  3. Serve salmon with cucumber dill sauce.
