Cody’s Loaded Hasselback Potatoes

 

Cody’s Loaded Hasselback Potatoes is one of our favorite potato side dishes. It is a fun twist on a classic baked potato. They are simple to make, but they up the “wow factor” if you are trying to impress guests! They are perfect for a cookout-style dinner!

Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 60 minutes

INGREDIENTS

  • 4 Russet baking potatoes, scrubbed and patted dry
  • 4 tablespoons olive oil
  • coarse sea salt and black pepper, to taste
  • Optional toppings: cheese, sour cream, fresh chives, crumbled bacon

INSTRUCTIONS

  1. Make vertical slits into potatoes, stopping just before cutting through.
  2. Rub each potato with one tablespoon of olive oil. Gently fan potato to ensure some of the olive oil can get in between the slices. Coat each potato with sea salt and pepper to taste.
  3. Bake at 375 degrees for 45-60 minutes. Potato skin should be browned and crispy.
  4. Turn oven to broil. Top each potato with cheese and bacon if desired. Broil for 2-4 minutes or until cheese is browned and bubbly.
  5. Serve with sour cream and fresh chopped chives.

NOTES

Dairy-free: Use bacon and chive topping only.
Vegan: Only use chive topping.
Vegetarian: Only use cheese, sour cream, and chive topping.
