Caprese Two-Ways

 

Oh friends, you MUST try Caprese Two-Ways! There is no arguing that traditional caprese salad is a summer staple, but pairing fresh peaches with soft mozzarella and in-season basil is a total game-changer. I almost feel like I am cheating on tomatoes, but peaches may be my new favorite way to enjoy caprese salad! I recently made this for a family dinner and it was a huge hit. It is a perfect appetizer or side dish to bring to a cookout, dinner, girls’ night, or party–easy, fresh, and delicious!

A lot of caprese salads are served with a balsamic glaze on top. Glazes are generally high in sugar, so I used Tessemae’s Balsamic Vinaigrette instead. This reduced the overall amount of sugar without compromising taste and allowed the natural sweetness of the tomatoes and peaches to shine through. I buy Tessemae’s from Whole Foods–it can be found in the produce area.

Be sure to add this to your menu within the next few weeks while peaches, tomatoes, and basil are still in season! YUM!

Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

INGREDIENTS

  • 2 peaches, sliced into 8 thin pieces
  • 2 heirloom tomatoes, sliced into 8 thin pieces
  • Buffalo mozzarella, sliced in 16 thin slices
  • 1 cup of basil leaves, ribboned
  • 1/4 cup or more olive oil, divided
  • 1/4 cup or more Tessemae’s Balsamic Dressing
  • salt, to taste
  • freshly cracked pepper, to taste

INSTRUCTIONS

  1. Layer the tomato slices and half of the mozzarella on one plate.
  2. Layer the peach slices and the other half of the mozzarella on another plate.
  3. Evenly place basil ribbons over each plate.
  4. Drizzle 1/8 cup olive oil and 1/8 cup balsamic vinegar over each plate. Season with salt and freshly cracked pepper.
