Blueberry Baked Oatmeal

 

Blueberry Baked Oatmeal is truly a most-loved recipe! I make this when we have overnight guests and set up a “breakfast bar” with warm milk, sliced bananas, blueberries, chopped nuts, and pure honey. I let everyone put a piece of warmed Blueberry Baked Oatmeal in a bowl and add their own “toppings.” This also freezes well. It is so convenient to pull a piece out from the freezer, warm it up for breakfast, and go on your way! I hope you love this as much as we do!

INGREDIENTS

  • 2 eggs
  • 1 cup unsweetened almond milk
  • 1/4 cup applesauce
  • 1/3 cup pure honey
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup of blueberries
  • Optional toppings: milk, sliced bananas, berries, nuts, or pure sweetener.

INSTRUCTIONS

 

  1. Preheat oven to 350 degrees. Thoroughly mix eggs, milk, applesauce, honey, salt, and cinnamon together. Stir on oats and blueberries. Pour in a greased 9-inch pie plate or square dish.
  2. Bake at 350 degrees for 25 minutes or until a fork inserted comes out clean.
  3. Top with milk, sliced bananas, berries, nuts, or pure sweeteners
