Parmesan and Lemon Roasted Asparagus

 

Parmesan and Lemon Roasted Asparagus is one of our favorite side dishes! It’s easy, delicious, and pairs well with a lot of different proteins. We frequently serve it alongside of fish, chicken, or beef. The lemon adds a bright and citrusy note. Enjoy!

Parmesan and Lemon Roasted Asparagus

Cook Time: 15 minutes
Total Time: 20 minutes

INGREDIENTS

  • 2 pounds asparagus
  • 2 tablespoons olive oil
  • 1/2 lemon
  • 1/4 cup fresh-grated Parmesan cheese
  • salt and pepper, to taste

INSTRUCTIONS

  1. Heat oven to 375 degrees.
  2. Wash asparagus and trim ends.
  3. Toss asparagus in olive oil, salt, and pepper. Squeeze lemon over asparagus.
  4. Bake for 8-10 minutes or until asparagus are slightly tender.
  5. Sprinkle Parmesan cheese over asparagus.

NOTES

Dairy-free: Omit Parmesan cheese. Paleo: Omit Parmesan cheese. Vegan: Omit Parmesan cheese.
